Mushroom places of the Novosibirsk region in 2019
The most common mushrooms
On the map of the Novosibirsk region, mixed forests are predominantly indicated, therefore, mushrooms characteristic of this type of forest area are most often found here: aspen and boletus, boletus, chanterelles, milk mushrooms, russula and honey mushrooms.
Features of the appearance, the period of mass collection and the use of mushrooms in cooking, common in the NGS, are as follows:
- Aspen and boletus boletus: grow on birches and aspens (they are mycorrhizal formers), have caps from light brown to bright orange, tall, fleshy, legs with black veins. These mushrooms are harvested from June to October. They are used in soups and pickled.
- Butterlets: found in pine or spruce forests, in needles under trees. They grow in a kind of "paths" in illuminated places. The cap is brown in color with a small amount of mucus, slippery, on the underside - orange, tubular. Mushrooms grow massively from July to September. They are pickled, used for making soups, fried.
- Chanterelles: characterized by a yellow or peach shade of the color of the cap, a thick fleshy leg and a pleasant fruity-nutty smell. They are harvested from June to early October.
Irina Selyutina (Biologist):
The hymenophore of chanterelles differs sharply in appearance from the spore-bearing layers of other lamellar fungi. It was its features in structure (which is clearly visible visually) and the formation of spores that served as the basis for separating them into a separate family:
- Instead of thin plates characteristic of agaric mushrooms, chanterelles have rather thick forked folds with rounded edges on the underside of the cap.
- The type of basidia (structures for sexual sporulation) is spontaneous and is inherent exclusively in the Chanterelle family (Cantarella).
Chanterelles, like champignons, can be grown industrially, however, all qualities (taste and aroma) are lost, which became an insurmountable obstacle to their introduction into culture.
- Milk mushrooms: there are white, or "raw" and black on the territory of the region. They have a funnel-shaped cap with downward-curved edges and a fleshy hollow leg, with white plates on the back. They are massively harvested from mid-August to early October. These mushrooms are considered the best for salting, but they require preliminary soaking due to the presence of a pungent milky juice in the pulp.
- Russula: lamellar mushrooms on a fragile white stalk and with a bright pink cap, outwardly similar to the poisonous pale toadstool. They grow from June to September. They are used boiled, fried or stewed.
- White, or boletus: long considered the most valuable fungus, it grows mainly in fern thickets in whole groups; has a convex wrinkled cap from light to dark brown and a fleshy white leg. It is harvested from early July to late September. It is good marinated, boiled, fried, salted and dried. Depending on the habitat, a number of species are distinguished, the names of which emphasize where to search: birch, pine, etc.
How to find mushroom spots
Mushrooms grow in every forest
There are mushroom spots in every forest. Their location depends on a number of factors: landscape, type of soil, presence of certain trees and light conditions. Based on their preferences and the characteristics of mushroom growth, they choose a suitable place.
Irina Selyutina (Biologist):
How can you find a mushroom place yourself that can reward a person for work? For this, it is important to get rid of a number of misconceptions:
- "Mushrooms grow in the forest": in fact, in the literal sense of the word, they are much less common there than in small-wooded plantings, on the edges or outskirts, or along the banks of rivers and ditches. When entering the forest, it is best to immediately pay attention to the edge of the forest on the south side.
- "There are no mushrooms near the parking lot": everyone thinks so, so carefully examine the surrounding area and you will definitely find mushrooms.
- "Mushrooms do not like beef": on the contrary, porcini mushrooms are not indifferent to cow paths. There is even a species called the Ladybird.
If "hunting" for porcini mushrooms - look for birch groves, pine oak forests, bright and well lit on the map. To search for aspen and boletus boletus, they go to places with the greatest distribution of birches and aspens, chanterelles and boletus - to coniferous forests on lawns or small ravines.
The landscape is preferred by mushrooms with small hills and slopes, glades, where it is light and trees rarely grow, but there is no direct sunlight - a lacy shade can become a wonderful habitat for mushrooms. Also important for the mushroom picking season and weather conditions. In the dry season, a rich harvest is not harvested, and a warm and humid cyclone increases the yield of almost all types.
The best time to pick mushrooms is in the early morning of the day after rain, when the young are growing up.
