- Apricots - 7 pieces
- Plum - 8 pcs
- Granulated sugar - 400 g
- Citric acid - 1/3 tsp
Preparation
- First of all, let's prepare the fruit.
- I wash both apricots and plums well under cool running water. Be sure to take care not to get spoiled fruits, otherwise you can ruin the whole compote. Leave the fruit for a while so that the excess liquid is glass.
- While the fruit is draining, prepare the container for preservation. Wash a three-liter jar well with baking soda, rinse and sterilize. Sterilize the container in the most affordable way for you: in the oven, microwave, or simply using an ordinary saucepan with steam. The metal lid must be boiled for a few minutes.
- Before you put the plums into the prepared jar, you need to prick them in several places with a toothpick so that the plums do not burst during the preparation of the compote. This spoils the appearance of the drink. Only the skin will crack.
- Next, put plums and apricots in a sterilized jar.
- Pour filtered water into a deep saucepan and set to heat.
- As soon as the water in the pot boils, pour it into the fruit jar. We cover the container with a metal lid. Leave the fruit to warm up for 10 minutes. To keep the jar warm longer, you can wrap it up a little, at least with a terry towel.
- After 10 minutes, pour the water from the jar into the pan and send the container back to the stove for heating.
- As soon as the water boils, add citric acid and sugar. After boiling again, cook the syrup for just a few minutes. With this amount of sugar, the compote turns out to be a little concentrated. When finished, it can be diluted with boiled water. So there will be more drink.
- Fill the fruit in a jar with the prepared syrup and immediately roll it up with a metal lid. Turn the container upside down. We wrap the jar well and leave it in this position until the compote in the jar cools completely. After that, containers with compote can be safely transferred to a cool place for long-term storage.
